Luxury Dining: Caesars Palace's 808 offers a scrumptious Euro-Pacific-inspired menu stemming from celebrity chef Jean-Marie Josselin. The prestigious James Beard Foundation has nominated Monsieur Josselin six times for the award of Best Chef of Pacific/Northwest. Wok-Charred Mahi Mahi is probably his most-celebrated dish. The 808's current menu is comprised of various signature dishes that incorporate the France-born executive chef?s diverse background.
